
I made these using Purple Sweet Potatoes from Honduras. The recipe is similar to making a delicate scone. It's important to not overwork the dough. I found my dough to be very dry and crumbly. A little more moisture would have helped, I think. However, they turned out fine and tasted a bit sweet for my tastes. Thanks to Prudy of Prudence Pennywise.
