It's getting closer to Autumn and that means baking with APPLES!!!
The combination of cinnamon, brown sugar and baked apples is truly a classic.
I added cardamom as well for a twist.
This crumble is very easy to make and will make the house smell soooo good!!!
3 red apples (Macintosh)
3 green apples (Granny Smith)
1/2 cup raisins *optional
1 lemon
1/4 cups sugar
1/4 flour
1/2 tsp cinnamon
1/2 tsp cardamom
1 tsp vanilla extract
Crumble:
1 cup flour
1/2 cup sugar
1/2 cup quick oats
1/4 light brown sugar
1/2 tsp salt
1/4 tsp cinnamon
1/4 sliced almonds
1/4 lbs (1 stick) cold unsalted butter, diced
Directions:
Peel and slice the apples in thick wedges and place in large bowl. Squeeze the juice of one lemon over the apples and toss. Add raisins, cinnamon, cardamom and vanilla extract and toss again. Sprinkle about 1/4 cup of flour over the mixture and mix again; set aside for 5 minutes. Spoon mixture into a 8 inch x 8 inch square pan.
For the crumble, combine the flour, oats, sugars, salt, cinnamon and butter in a bowl. Using either a pastry cutter or your fingers rub the mixture until it's in big crumbles, then sprinkle evenly over the apples. There will be left over crumble. I added extra slice almonds on the top to make it look nice.
Place the square pan in a 350F oven for about 45 minutes or until the top is nice and browned and crisp. Serve warm or at room temperature. Add a scoop of vanilla ice cream if you so desire. Enjoy!!!
